The food we eat contains many organic chemicals. Some of these chemicals are found naturally in food, and some are added as preservatives or to enhance flavor, texture, or color. For this discussion, you should choose a food or ingredient that you enjoy (or dislike!) and research online to determine one organic substance (natural or added) that is present in that food/ingredient. Start a thread to report your findings. Your post should include:

  • The name of the food/ingredient
  • The name of the organic chemical
  • The structure of the organic chemical (use the “Insert Stuff” button to attach a picture of the structure you find online)
  • A list of the functional groups in that structure
  • A description of what the chemical does in the food (provides color, flavor, preservative, etc.).
  • A source (website is fine) that you used in your research.

For examples, see the “Kitchen Chemistry” boxes in Chapter 12 of the textbook (pages 430 and 438) describing chemicals found in spicy foods and garlic.
